
Creamy Boursin cheese, sweet corn, garlic, and Florida Pink Gold Shrimp flavor this easy dinner. It features baked Pink Gold Shrimp with a Boursin cream corn sauce.
Ingredients
- 1½ pounds TampaShrimp.com Pink Gold Shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 (5.2-ounce) package Boursin Garlic & Fine Herbs cheese
- ¾ cup heavy cream
- 1 cup corn kernels, fresh, frozen or canned (well drained)
- ¼ cup white wine, vegetable broth, or chicken broth
- 3 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Dijon mustard
- Juice of ½ lemon
- Salt and pepper, to taste
- Fresh chives, for garnish
Directions
Preheat oven to 400°F and lightly oil a baking dish.
In a saucepan, combine the cream, Boursin, corn, garlic, and your choice of white wine, vegetable broth, or chicken broth. Stir over medium heat for 3 to 4 minutes, until the cheese melts and the sauce is smooth. Whisk in the Dijon and lemon juice.
Pour the sauce over the shrimp and bake for 10 to 12 minutes, until the shrimp are cooked through. Garnish with parsley and chives and serve immediately.
